What a flavour match actually is
Flavour matching is the practice of reproducing a target sensory profile using a different formulation. You send a benchmark — a flavouring you currently buy, a competitor product on the shelf, or a bench prototype somebody made once and never wrote down — and our development team builds a flavour concentrate that delivers the same experience in your product.
It is worth being precise about the goal. Nobody is producing a molecule-for-molecule replica; that is neither achievable nor useful. The commercial standard is that an experienced taster, and more importantly your customer, cannot tell the difference in the finished product. That means the match has to hold up not in a glass of water, but in your base, at your dosage, through your process, across your shelf life.
When manufacturers ask us to match a flavour
A supplier has discontinued a profile
The flavouring your best-selling line depends on has been dropped or reformulated. A match keeps the product on shelf unchanged.
Consolidating or changing supply
Matched replacements let you move supply without touching the recipe. See changing flavour supplier.
Benchmarking a market leader
You have identified a taste direction that works commercially and want your own version of that profile in your own format.
Reformulating around a constraint
A carrier, allergen, sweetener or labelling requirement has changed and the profile has to survive the change intact.
The minimum order has become unworkable
The flavouring is right but the commercial terms are not. Batch sizes have come down, the range has widened, or a 20 kg commitment per profile has stopped making sense across a dozen SKUs. A matched replacement with a low minimum lets you hold several profiles instead of over-committing to one.
Qualifying a second source
Single-sourcing a flavouring is a continuity risk. A matched equivalent from a UK manufacturer gives you a qualified alternative on the shelf, with documentation your technical team can file alongside the original.
To be clear about scope: we match and manufacture the flavouring. EC Aroma does not offer white label, private label or contract manufacture of finished products — the matched concentrate is supplied to you and you produce your own product with it.
How the matching process runs
- Send the benchmark and the briefThe flavouring or finished product, plus application, base matrix, format, process conditions and any restrictions.
- Analytical and sensory assessmentWe characterise the target: profile family, top notes, body, sweetness perception, carrier behaviour and how it must perform in your matrix.
- First matched sampleSupplied from 1 kg so you can bench-trial in your real base rather than judging it in isolation. See samples.
- Refinement roundsStructured feedback — too sharp, thin on the finish, wrong fruit variety — drives the next iteration. Most matches converge within a few rounds.
- Approval and supplyYou sign off, we lock the specification and hold it batch-to-batch. Documentation supplied on demand.
What makes a match succeed or fail
The single biggest predictor of a fast, accurate match is the quality of the brief. A benchmark with no context forces our team to guess at the matrix, and a flavouring that performs beautifully in water can fall apart in a high-protein drink, a low-pH beverage or a baked product that sees 200 °C. Tell us where it has to work and the first round lands far closer.
Format matters as much as profile. The same target can be built as a water-soluble liquid, an oil-soluble system or a powder, and the right choice is dictated by your process rather than by preference. Carrier restrictions — PG-free, particular solvent systems, allergen or labelling constraints — should be on the table from day one, not discovered at round three.
Where no sample survives, we can work from a written specification alone. A profile description, the application and a target dosage range are enough to begin development. It takes more refinement rounds than a physical benchmark, but it is a workable route when a product has been discontinued and nothing was retained.
We deliberately do not publish dosage figures on this page or anywhere else. Dosage is product-specific: it moves with the profile, the format, the base and the sugar and acid levels of the product. We recommend a starting rate for your specific application and you confirm it by bench trial, which is precisely why our starting quantity on standard profiles is a usable 1 kg rather than a token vial. Minimums start at 1 kg for standard profiles from our range; bespoke and specialist development is quoted per project.
Pricing
Flat and keenly competitive: one price per flavour type, the same for every customer, with no negotiation and no volume penalty for ordering small. We do not publish figures — ask, and we will quote plainly with the recommendation.
Confidentiality
Benchmarks, briefs and the formulations developed from them are handled in confidence, and we are happy to sign a non-disclosure agreement before anything is shared. A profile developed for you is yours.
Timings
Match timings depend on complexity and the number of refinement rounds. Liquid flavourings are dispatched fastest; spray-dried powder formats take longer because of the additional processing involved. We give realistic dates with the quotation.
Flavour matching questions
Can you match my flavour sample exactly?
In most cases we can reach a match that's indistinguishable in your finished product, which is the standard that matters commercially. A literal molecule-for-molecule copy is neither possible nor necessary — the target is a flavouring that performs identically in your base, at your process conditions, over your shelf life.
What should I send for a flavour match?
Ideally the benchmark flavouring itself, or the finished product it goes into, plus your application, base matrix, required format, process conditions such as heat or pH, any carrier or regulatory restrictions, and expected volumes.
Is my benchmark treated confidentially?
Yes. Benchmarks, briefs and resulting formulations are handled in confidence, and we're happy to work under an NDA. Profiles developed for you are yours.
How long does flavour reverse engineering take?
It depends on the complexity of the profile and how many refinement rounds are needed. Liquid flavourings are dispatched fastest; spray-dried powder formats take longer because of the additional processing involved. We confirm realistic timings with the quotation.
What dosage will the matched flavour need?
Dosage is product-specific — it depends on the profile, the format and your base, including sugar and acid levels. We recommend a starting rate for your application and you confirm it by bench trial, and minimums start at 1 kg for standard profiles from our range, with bespoke and specialist development quoted per project.
Can you act as a second source for a flavouring we already buy?
Yes. Qualifying a second supplier is a common brief — to de-risk a single-sourced ingredient, shorten lead times with a UK manufacturer, or hold a smaller working stock than a full drum. We develop against your existing reference and you approve the match in your own product and process before switching any volume.
What is your minimum order quantity?
Minimums start at 1 kg for standard profiles from our range. Bespoke and specialist development is quoted per project, so we confirm the workable minimum with the quotation. The intention is that a first order is a quantity you can genuinely trial with, not a token vial.
